Idido Yirgacheffe, Ethiopia - Counter Culture Coffee

週末到 Third rail coffee (TRC) 補充咖啡因，順便看看自己有沒有好運氣可以買到 Counter Culture Coffee 的新書（可惜依然沒有影子）不過看到了老朋友 Idido．（這應該是我第一支喝到的 Ethiopian 產區！還記得那小小的豆子）還有一些有趣的發現/想法～

咖啡有趣，和印象中的idido 好像不一樣，簡單紀錄：

TRC 這天供應四支咖啡，除了一個 Colombian 之外，其他三支都是 Ethiopian, Idido (YirgaCheffe), Duromina (Jimma), 然後就是 geisha (猜測是 Geisha village)．回頭想想今年初的 Good food award 18，好友 Dave 發現所有得獎的豆子都是 Ethiopia，還有最近 SCA，CCC 都有出關於 Ethiopia 的書，我想今年應該會是 Ethiopia coffee 重要的一年．

記得以前對於衣索比亞咖啡品種都是很簡單的寫 Heirloom,  Indigenous Heirloom Cultivars, 或是 Heirloom Landraces．（除了少數的公司之外）基本沒有詳細的訊息．不過仔細想想 Panama Geisha 這支品種的故事，還有兩個藝術家跑去建立 Geisha village 的故事，再加上 Ethiopia 西南方的那篇森林可是 Coffea arabica L. 的原生區域．要談起品種， 我想 Ethiopia 才會是真正的王者．

品種：

74110: 對 CBD 有抵抗力的當地品種；squaremile 說是緊湊樹型，但是Drop 的資料說是高樹大葉子，所以需要 1.75m 樹間距（而不是一般的 1.5m）

Variety 74110- Bishari. This variety was selected near Metu in Ethiopia, and was originally released in 1979 by the Jimma Agricultural Research Center.

74112: 對 CBD 有抵抗力的當地品種，緊湊樹型，
74165: 對 CBD 有抵抗力的當地品種

這些編號好像是 JARC Jimma 農業研究中心對於他們擁有的咖啡品種的編號，很可惜我還是找不到相關資訊的資料庫

在 ETHIOPIAN COFFEE HANDBOOK（95）裡面，解釋了這三種都是對 CBD 有抗性的品種， 74110, 74112 屬於 compact 樹型，而 74165 medium open type 型態，compact 生長喜歡較緊密的生長方式，而open 偏好分散．另一篇文章解釋 74110 有著現行種植方式（2015）最大的產量 24.03 q per hectare．然後這三個品種個品種的原生區域都在 Metu / Illubabor，採集於 1978/79．

Kurume: 提過一次 Ethiopia Reko ，照片．好幾的不同的來源都提到這個品種 比typica 小，有著明顯的甜味，做成咖啡香氣十足．

在 George Howell 的 Reko 2017 有段有價值的文字
『There is no single variety in the Yirgacheffe coffee area; instead ancient prototypical varieties that have been selected locally by choice and happenstance from the surrounding forests have been blended to produce a unique expression of terroir and plant variety. One of these varieties is called Kurume and in cuppings has been found to be particularly outstanding in cup value. Farmers cannot plant new or different varieties by law.』

似乎暗示了 kurume 不是基因上的一個品種，而是 Yirgacheffe 附近混合品種在反應風土之後產生的類型．在CCC供應的咖啡裡，這品種也是出現在 Yirgacheffe裡面．

Wolisho: 關於這個品種沒有太多資訊，可以看到人們提到他和另一個品種 Certo（當地選拔種）一起被提起為古老的原生品種，甚至描繪這兩個品種相關品系佔據了由 Guji, 到 Jimma 這些區域的森林．(不過核心是 Gedeo highlands)

Dega: 又叫 Deiga，似乎類似 kurume 的案例，以該地區風土還有混合品種產生的特殊風味訂名的品種．區域 Metu 東邊，Illubabor 內部．其實 wolisho 也是類似的例子．

Gujicha:  The Guji Highland estate calls the varieties they grow on their farm “Gujicha,” which simply means “from Guji.”
