NEPAL -SYANGJA, Lo Colombe Wicker Park (BlueLine-Damen)



從沒想過Nepal 竟然也生產著咖啡

雖然妹妹曾經在那個喜馬拉雅之國狂奔過幾年

也沒聽她提過Nepal Coffee

這天竟讓我在 La Colombe 發現了 Nepal -SYANGJA
(吐槽:老闆不虧是冒險狂人,等你哪天開始供應南極咖啡豆)

官方介紹這樣描述著

"A rare bean from outside the "coffee belt" and hailing from all places, the Himalayan slopes of Nepal. Naturally organic and grown on smll plot farms surrounding the village of Syanja"

上網查了Nepal Coffee 的資料

一般描寫 Nepal coffee 常用的形容是小農和自然有機,不過不太有對味道的討論
(就算不跟著所謂新技術打轉,搞不好流行轉了一圈又回到了最原始的做法)




趁著吧台手用 Steampunk 在準備咖啡時跟他們聊天
吧台手推薦這支咖啡自己在家沖的話,使用 Frenchpress
想想適合用這個類似 Cupping 手法的豆子,通常不會給我很多"偏好"的味道

咖啡一入口:「............嗯...............」「好乾淨」


Hot: Tobacco,Very clean, 生津微苦, smell, a little brown sugar.


Cool: Tobacco.



嗯,怪豆子!不虧來自怪地方


喝到這種乾淨的豆子

腦子會暗暗思考著 Note by note 這分子廚藝的分枝
如果 Note by note 做出咖啡,也許就是這種味道吧!?

不過還是很謝謝吧台手們

高大哥,喝到了 MARAGESHA 和 Sudan Rume 兩個怪東西 (Intelligentsia)

大哥,你知道嗎?其實 Geisha 的出生地,目前還是不太清楚!

Modern scientist struggle the fact that in Southwest Ethiopia there is three different towns called Geisha:

a) Geisha in Kaffa Province in Kefa district,
b) Geisha in Kaffa Province in Maji district and
c) Geisha in Illubabor Province in Mocha district.

The exact origin of Panama Geisha is therefore unknown.

今天跑到 Intelligentsia 喝了個叫 Sudan Rume 的品種

介紹是這麼說的

『A legendary coffee variety that originated on the Boma Plateau, located in southeastern Sudan near to the Ethiopian border. This area belongs to a region considered to be the birthplace of the Arabica species. Sudan Rume has long been used by plant breeders as a source of ‘quality’ genes, but is rarely planted because it doesn’t produce large yields. 』

最近在 Intelligentsia喝了 MARAGESHA (Maragogype x Geisha) 和 Sudan Rume 兩種怪咖啡.不知道為什麼,寫出來的note 的相當類似


MARAGESHA (Maragogype x Geisha)

Bright, Acidity, Sweet, weak Aroma, Lemon-like
a little honey and cream at after taste.


我覺得主要的感覺是明亮,酸,冷了後舌頭上會出現奶的質感


Sudan Rume
Bright, Acidity(Plum?), very clean
not sweet at all
milk and aroma at after taste(chocolate?)


我覺得主要的感覺是明亮,咖啡包覆舌頭的時候有舒服的酸,吞下咖啡之後口腔就沒有太多殘餘的味道,另外冷了後會出現奶的質感

現在的猜測是 包含 Maragogype和 Rume Sudan 都是 Typica 的變種,在經過類似的烘焙哲學,就產生了類似的味道~

不知道大哥怎麼想呢?
