沒想到還沒開幕
Facebook 上那堆照片原來是內部活動，唉～
加上重新裝修的 Broadway，四月下旬就有兩家新 Intelligentsia 出現在芝加哥！
另外，他們好像要在一家大型的聯鎖超市系統裡再開一家分店！
他們真的經營的不錯！

想想，好一陣子沒去 Gaslight Coffee 了
沿著 Milwaukee Ave. 向南慢慢移動
經過一個冬天 Logan Square 變得好髒，沒有以前那種歐洲的精緻感
之前 Logan Square 可是街頭藝術家表現自己才華的好地方
例如，Monopoly Game Street Art Found on the Sidewalks of Chicago 就有出現在這個區域
希望 新開幕的 Intelligentsia 能帶著整個區域再次變好！

Gaslight Coffee 現在和幾家店形成一個類似聯盟的系統
這 Gaslight system, 包含了 Gaslight, Worm hole, 還有 HalfWit coffee
（Wormhole以前可是 Metropolis的客人，重新裝潢之後連豆子的來源都一起換了）
這幾家店會自己選擇豆子，共用着同一個 Roaster
咖啡店的風格也給我同樣的感覺
雖然氣氛很時髦，也吸引着一大群 Hipist 在這裡出沒
人們也很享受這裡的咖啡
但是這裡的的咖啡不適合我，試了不少支豆子的 Pour Over
對我來說他的咖啡味道太重
我的舌頭老是無法理解杯子裡的樂趣
總是要到了 AfterTaste 才回找到一些明顯又有趣的東西
還有一定會找到的清涼感
這一天選擇了Bariste推薦的：
Colombia, Giovanni Lizcano, Pour-over
嗯，老樣子， 好強烈的味道
入口是明亮而強烈的酸、舌根微苦，After taste 是微微的甜、聞不到什麼可以形容的特徵。冷卻之後、水果的感覺慢慢浮現，並帶著像薄荷的清涼。

A Pedregal plus microlot from Los Cauchos in La Palmera
Our first exclusive lot, made possible by the fine folks at the coffee shrub. this coffee is grown by Giovanni Lizcano on his farm, Los Cauchos. The farm is almost completely Caturra, with little smatterings of Typica and Bourbon. giovanni manually depulps the coffee cherry on a gallo depulping machine, ferments in one of two tiled tanks for 16-20 hours and washes in the same tanks. he brings the wet parchment just about a mile across the valley to his home where he has raised parabolic drying beds on his roof. pedregal coffees are so sweet but it’s the range of sweetness that’s so impressive. Brown sugar and raw honey perfume the aromatics intensely while, although still present in the cup itself, juicy fruit flavors like green grape and red apple are most apparent.

Elevation - 1800 - 2100 meters
Varietal - Bourbon
Process - Pulping, dry fermentation, wet fermentation, washing, soaking, dried on raised beds
